THE JOB:

Join us as the Executive Chef for Seabreeze Cafe at Mandalay Bay, where you'll turn culinary dreams into reality while leading a talented team in our vibrant fast paced kitchen! You'll be the driving force behind innovative menus that excite our guests while ensuring every dish meets MGM's high standards of excellence. THE DAY-TO-DAY:

• Owns and oversees daily kitchen operations, including fiscal budgets, labor productivity, scheduling, inventory control, guest service.

• Executes policies and procedures, oversees training programs, and ensures adherence to health, sanitation, and cleanliness standards.

• Manages human resources responsibilities, fostering a positive work environment that promotes teamwork, performance feedback, and compliance with company policies and diversity commitments.

• Interacts with guests to ensure satisfaction and product quality, addressing complaints and feedback appropriately.

• Collaborates with divisional directors and kitchen teams for seamless product delivery, maintaining high knowledge of the property’s food and beverage products.

THE IDEAL CANDIDATE:

• 2+ Years of prior relevant experience working in a Culinary environment as a Chef

• Previous experience managing employees under a collective bargaining agreement preferred

• Previous experience working in a banquet kitchen or high-volume restaurant or previous experience in a luxury or fine-dining restaurant preferred
