YOUR MISSION (The Job Description)

The Assistant Director of Food & Beverage supports the Food & Beverage Director in overseeing most food & beverage operations in Virgin Hotels Las Vegas, including managing budgets, supervising staff, maintaining service quality, and ensuring compliance with health and safety regulations. Key responsibilities involve assisting with menu planning, monitoring industry trends, handling guest complaints, and contributing to the overall profitability and success of the department.

Qualifications

THE NITTY-GRITTY (The Essential Job Duties)

  • Assist in supervising daily food and beverage operations to ensure high standards of service and product quality
  • Help prepare and monitor the department's budget, control costs, and take steps to maximize revenue
  • Supervise and train F&B personnel, fostering a positive work environment, and holding team members accountable for service behaviors
  • Respond to guest complaints promptly, ensuring a positive experience for all customers
  • Ensure adherence to all local liquor laws, health regulations, and sanitation standards
  • Monitor industry trends, assist with menu planning, and implement strategies to maintain competitiveness and drive operational success
  • Prepare required reports and maintain clear communication with the F&B Director, other managers, and staff
  • Perform other duties as assigned

WHAT IT TAKES (The Qualities We Look For)

  • In-depth knowledge of front-of-house and back-of-house operations
  • Strong abilities to lead, motivate, and communicate effectively with a diverse team
  • Capacity to quickly identify and resolve operational and personnel issues
  • Familiarity with inventory management systems and point-of-sale (POS) software
  • Proven experience in food and beverage or a related field.
  • Strong leadership, communication, and interpersonal skills.
  • Ability to manage teams and motivate staff.
  • Excellent organizational, planning, and problem-solving abilities.
  • Familiarity with financial management, budgeting, and cost control.
  • Knowledge of health, safety, and liquor regulations

MUST HAVE'S

  • Requires food safety certifications
  • Requires several years of management experience in a high-volume food, or hospitality environment
  • Current, legal, and unrestricted ability to work in the United States

WOULD BE NICE TO HAVE'S

  • College / Trade school degree or equivalent work experience
  • Experience with Collective Bargaining Agreements
  • Multi-unit General Manager or Assistant Director experience
