ESSENTIAL FUNCTIONS:

-         Administers allaspects of food preparation at outlet ensuring 100% internal/external guestsatisfaction.

-         Serves as a leaderfor employees while fostering teamwork, employee morale, motivation and opencommunication.  

-         Leads the departmentby creating a positive, supportive environment where talents, skills and tradepractices are exchanged and operational support is provided for all Food andBeverage employees.  

-         Coaches and developsemployees using a consistent approachable demeanor and clearly articulatingexpectations.

-         Strives to improveand streamline departmental operations through the continuous assessment ofpolicies and procedures, work processes and program effectiveness/value. 

-         Plans all daily andspecial event menus as directed. 

-         Executes and auditssupplies and inventory items insuring cost controls.

-         Ensures that theminimum level of labor is used to perform the required level of service withoutimpacting service standards. 

-         Completes therequired daily financial tools and reports. 

-         Ensures that allservice equipment is operational and handled safely, reporting mechanicalissues to appropriate team members. 

-         Communicates variances from establishedstandards to Food Operations Manager.

-         Helps set performanceexpectations and provides operational support for the supervisory team andemployees. 

-         Enforces allappearance and uniform guidelines. 

-         Recommends changes onall standard menus and consistently strives through menu planning to improvefood costs, volume, quality, attractiveness and efficient preparation of allfood related items. 

-         Conducts periodicinspections of all assigned areas including line, preparation, pantry, clean-upand storage to and administers safety policies and procedures pertaining to theprocedures.

-         Recommends changesincluding hiring, promotion, demotion and release of personnel.

-         Recommends wage andsalary adjustments for personnel within established limits. 

-         Adheres toregulatory, departmental and company policies in an ethical manner.

-         All other tasks asassigned by Food Operations Manager and the Director of Hospitality.

 

QUALIFICATIONS: 

-         Bachelor’s Degree preferred.

-         Minimum of 2 years experience in a large volumefood establishment including banquets, buffets and specialty outlets preferred.

-         Culinary expertise in multiple specialties ispreferred.

-         Must possess exemplary customer service,written/verbal communication, interpersonal and managerial skills. 

-         Knowledge of all phases of food administration,cost controls and administration is preferred.

-         Computer skills (Micros, Excel, Word, Outlook,etc.) required.

-         Must be flexible in schedule to include nights,Holidays, and weekends.

-         Must pass SuperLap.
