Kitchen Supervisor

Description

We are looking for a full time Kitchen Supervisor that will assist in overseeing the operations of our Anaheim and Los Angeles locations. This position is ideally suited to a cook interested in taking a next step in their culinary journey.  

As a Kitchen Supervisor at a Pali Wine Co. Outpost, your job includes all culinary activities and will include but not be limited to the following duties:

• Place food orders
• Maintain food cost at or below budget
• Ensure standard receiving practices are followed and proper rotation of product
• Maintain organization of storage of food and equipment
• Ensure all equipment is properly maintained and preventive maintenance practices are in place
• Ensure all standard public health practices for food safety are being upheld
• Make sure prep lists are in place, adapted and used on a daily basis
• Track waste
• Perform prep duties as needed to ensure proper mis en place
• Ensure kitchen is properly set up for service
• Work shoulder to shoulder with teams through the rush
• Monitor ticket times and ensure consistency and quality of food
• Perform monthly inventories
• Ensure recipe adherence 
• Perform daily line and temperature checks
• Regulate safe practices of employees. 
• In concert with the GM, develops menus for private events, Wine Club events and Winemaker dinners and acquire necessary food, manage costs and assist with pricing. 
• Ensure customer satisfaction

Requirements

• Must be at least 21 years of age
• Food and wine knowledge preferred
• Prior management experience
• Ability to work weekends, holidays, evenings, and adapt to a flexible schedule
• Food Handler's Certification
• This position will involve the ability to lift, carry and/or transport 40 pounds (a case of wine) is necessary
